Chef Allen Hess is delighted to announce the opening of his highly anticipated restaurant, ‘F.O.R.C.’, which is set to open on Thursday, May 20th, with reservations accepted.

The country kitchen style eating house, located in Waimea Town, invites guests to enjoy Chef Allen Hess’ latest venture F.O.R.C. With a menu featuring Hawaiian Regional comfort plates and local ingredient dishes. F.O.R.C. will also offer a superb selection of cocktails, wine, beer, tequila and whisky.

F.O.R.C. stands for “Farmer Ocean Rancher Cook”, a homage tothose who make Allen Hess’ distinct menus possible.  Diners will be taken on a journey steeped inlocal style and Waimea heritage from the moment they arrive. At the décor’sfocal point is a reclaimed wood art installation by Dr. Billy Bergin honoringthe brands of local ranchers. Every table and booth offer an exciting perspective into the newly renovated kitchen, dining rooms and bar, including a private dining room – where guests can choose from a bespoke, seasonal dinner menu and enjoy the theatre of local ingredients presented with time and expert technique.

A quick refuel to a lingering meal, the main dining area offers local style breakfast and Sunday brunch food, or just opt for the Bar, choose from a wide list of innovative cocktails and a pau hana Happy Hour. Expect specialty dining experiences throughout the year including STEAK- family friendly with local catch and local beef aged in house. Guests will also be given the chance to hire out a private dining room, for events and celebrations, with a rustic refinement complementing the main restaurant space.

“’F.O.R.C.’ has been a long-time vision for me and I’m excited to see it bloom,” said Chef Allen Hess. “I’ve lived here and worked in Hawaii Regional kitchens over many years and appreciate the historical blend of cultures. The flavorsand the incredible people, never fail to inspire me. We have a great team on the project and we’re ready to launch something really special in Waimea Town, just in time for summer.”

For the chance to be among the first in to experience the brand new restaurant, bookings are now open, please call noon to 3 p.m. to request a table. Happy Hour (3 to 5 p.m.) and Dinner Service (5 to 9 p.m.) starts this week. Breakfast and Brunch service starts May 27th and 29th, respectfully.
